Migas, Please

I added "Make migas for my señor" to my Living List a few years ago after reading about them on the Pioneer Woman's blog. It seemed like a silly thing to add to that list because I am always in the kitchen cooking up something new or different but whatevs - they sounded like something we could use a little more of in life!

I decided to make them today but I did not have the same ingredients that Ree did, so I improvised. Next time I know I will add black beans and will use a different cheese, but my migas came out fairly tasty, and my Señor liked them...

Scrambled eggs in a slurry of tomato, onion, jalapeno and cilantro...

Starting to set, added in some of the fried corn tortillas and shredded cheese ...added more at the end...

Plated with the salsa, overripe avocado (removed after tasting), a daub of sour cream and a wedge of lime...

Next time I will be more prepared to make this dish but at least I can cross something off that Living List, right?

I saw a picture of the baked egg/avocado dish on FaceBook and was intrigued. I like eggs and I like avocado so we immediately had it for breakfast. I didn't have chives so we made do with cilantro and tomato. It was a satisfying breakfast that we will definitely enjoy again...and again...
