I added "Make migas for my se
ñor" to my
Living List a few years ago after
reading about them on the Pioneer Woman's blog. It seemed like a silly thing to add to that list because I am always in the kitchen cooking up something new or different but whatevs - they sounded like something we could use a little more of in life!
I decided to make them today but I did not have the same ingredients that Ree did, so I improvised. Next time I know I will add black beans and will use a different cheese, but my migas came out fairly tasty, and my Señor liked them...

Next time I will be more prepared to make this dish but at least I can cross
something off that Living List, right?
Migas are delicious! My man usually gets them when we go out to eat for breakfast...which has been a while.
